Three-Michelin-starred Waterside Inn team to create menus at Royal Ascot

Michel and Alain Roux of the three-Michelin-starred Waterside Inn in Bray, Berkshire, are to create the menus for the Panoramic restaurant at Royal Ascot for a second time.

The father-and-son duo will serve guests of the Waterside Inn at the Panoramic a menu of contemporary French cuisine devised especially for the Royal Meeting.

Created by chef-patron Alain Roux, the menu will include dishes such as chorizo and almond palmiers with pepper salsa; poached fillets of sole flavoured with tarragon, morels and vin jaune sauce; and chocolate roulade with raspberries and melba sauce.

The Waterside Inn's general manager, Diego Masciaga, will oversee the running of the restaurant, which will use teams from both the restaurant and the racecourse serving lunch during Royal Ascot week from 14 to 18 June.

"While Royal Ascot is famed for its racing and fashion, food also plays an important part in the overall experience, and this is something we want contribute to," said Alain Roux.

"For five days only, we'll be showcasing our latest culinary creations from the Waterside Inn, bringing the finest cuisine, wine and ambience all to one place."

Last year, the Waterside Inn celebrated 25 years of Michelin's top accolade of three stars, making the restaurant the only establishment outside of France to have achieved this.

Meanwhile Sodexo Prestige last month scooped a lucrative contract extension at Ascot Racecourse, estimated to be worth £100m in total turnover. The hospitality provider, which has been the venue's exclusive caterer since 1998, will now operate at the racecourse for a further five years.
