A blast chiller directly compatible with the Rational 201 oven-loading trolley has been introduced by Foster Refrigerator, eliminating the need to transfer or de-tray food between combi and chiller. The RBC 20-60 blast chiller minimises delays by safely receiving loads at up to 90°C with a long-life silicon gasket able to accommodate high ingoing trolley temperatures.
The built-in Surf Navigation System allows simple selection of programmes - from delicate pâtisserie to large joints and stews - with "press and start" operation. Automatic Surface Protection prevents an ice skin forming on products, while an "intelligent" food probe is standard, setting the programme according to whether probe or timed chill is being used.
