Former Michelin-starred chef Tristan Mason has reappeared on the culinary map and set up his own business in Horsham, West Sussex.
Mason left London restaurant Orrery in February after it lost Michelin status, just six months after joining it from the Hare in Lambourn, Berkshire – where he scooped a Michelin star.
The 31-year-old chef, who has also worked with Marco Pierre White, is opening the 40-seat Restaurant Tristan tomorrow (22 July), showcasing modern British cuisine with French influences.
His aim is to gain Michelin status and put Horsham on the UK food map.
“Horsham is a lovely area - I just had a good feel about it,” Mason told the West Sussex County Times. “I want to get my star and I want my three AA rosettes. I want to make it one of the best restaurants in England."
