Head chef Daniel Cox is to leave Roux at Parliament Square just 10 weeks after the restaurant opened.

The Westminster restaurant, which opened in May, is a collaboration between Michelin-starred chef Michel Roux Jnr and Restaurant Associates, the fine-dining arm of contract caterer Compass Group.

Following a rumour on chefs' website The Staff Canteen, the 2008 Roux Scholar confirmed to Caterer his decision to leave the restaurant and Compass at the end of July in order to pursue other opportunities.

A Restaurant Associates spokesman said that a replacement head chef was yet to be confirmed and that the Roux at Parliament square team would be supported by Restaurant Associates executive chefs in the interim period.

She added: "We are working closely with Dan to help him decide on his next career move and as a young chef with a huge amount of talent we are sure he has a bright future ahead of him."

Prior to Roux at Parliament Square Cox had worked at a number of Compass business and industry contracts, including Merill Lynch and UBS.

He said he couldn't yet confirm his next move.

Using foraged ingredients is nothing new but the trend has become more mainstream over the past two years. However, the wider use of foraged food in restaurants also carries a certain amount of danger.
