Former Michelin-starred restaurant the Walnut Tree re-opened today under the culinary direction of ex-Merchant House chef Shaun Hill.

The restaurant, just outside Abergavenny in Wales, was put into receivership earlier this year and purchased by Caradog Hotels in May.

William Griffiths co-owner of the Angel Hotel in Abergavenny, part of Caradog Hotels, said: “In just six months we’ve developed our concept for the Walnut Tree, completely refurbished the property and pulled together a tremendous team.”

The Walnut Tree Inn, which is has been credited with putting Wales on the culinary map, was founded by Franco and Ann Taruschio more than 30 years ago. 

It was taken over by new owners Francesco Mattioli and his then business partner and Michelin-starred chef, Stephen Terry in 2001.

TV chef Gordon Ramsay featured The Walnut Tree in his Kitchen Nightmares series in 2004, clashing with Mattioli over its menu and prices. 

Mattioli later said he was unhappy with the portrayal of his business.
