Albert Roux to head Brasserie Roux at T5

Albert Roux inspects hotel at Sofitel

Albert Roux is to oversee the opening of the 100-seat Brasserie Roux restaurant in the £180m Sofitel development in Heathrow’s Terminal 5.

The 605-bedroom property, which is set to open in June, will be run under a franchise agreement with parent company Accor by Arora International Hotels.

Brasserie Roux will be based on regional French cooking. Features will include a boardroom for private use as well as a chefs table allowing guests to dine in the kitchen. 

Roux will work with an as yet unnamed head chef who will be responsible for the day-to day operations.

He said: “I am really excited to be involved in such a prestigious project. My aim at the Sofitel London Heathrow is to provide guests and visitors to the hotel with a culinary experience that is second to none. 

“Brasserie Roux will enable diners to forget their airport surroundings, allowing them to sit back, relax and enjoy world-class cuisine.”

John Donaldson, executive director of the Sofitel London Heathrow, said: “I am confident that Albert’s experience and knowledge will provide real inspiration for our head chef and the team.”

The restaurant will be on the ‘land’ side of Terminal 5 and will compete against Gordon Ramsay’s Plane Food restaurant in the departure lounge.
