Recession forces Charlie Trotter to close two US restaurants

Charlie Trotter, one of the United States' best known chefs, has been hit by the recession with the closure of his two restaurants in the Palazzo Resort, Hotel & Casino, Las Vegas.

Bon Appetit magazine declared Bar Charlie, a sushi concept, one of the top 10 places in the United States for sushi - the restaurants struggled to make money.

"We couldn't be more proud and happy with the product," Rochelle Smith Trotter, director of business development for Chicago-based Charlie Trotter and until recently, Trotter's wife, told the Chicago Tribune. "We just celebrated two years out there. But we opened right at the beginning of the economic downfall."

Although Trotter was giving the opportunity to down-grade his restaurants at the Plazzo, Smith Trotter said he chose not "to compromise the integrity of what we were offering".
