Japanese restaurant Tsuru to launch new ramen concept

London sushi restaurant group Tsuru is to launch a new concept next year focused on the Japanese noodle dish of ramen.

Tsuru, which is co-owned by Emma Reynolds and partner Kensuke Yamada, currently operates three sushi restaurants at Bankside, St Paul and Bishopsgate, serving authentic Japanese food with a focus on sustainability.

The new restaurant concept, which has a working title of Tsuru Ramen, will be centred on the traditional Japanese dish of ramen, which typically consists of wheat noodles served in a meat- or fish-based broth.

Reynolds told Caterer and Hotelkeeper she felt there was a gap in the market for a good-quality and authentic ramen restaurant.

"The inspiration for the new concept came a few months ago when Ken and I wanted to go out for a nice hot bowl of ramen. We didn't know where to go so tweeted about it and the response we got was that there really isn't a stand-out ramen restaurant in London," she said.

Reynolds added that the couple were now actively looking for sites for the new restaurant. "We're looking anywhere from Shoreditch and Clerkenwell to Soho," she said. "It's going to be completely different from Tsuru. There'll be a big focus on drinks, Japanese whiskies and beers."
