The wild boar burgers and sausages are made from Australian wild boar meat, which is light in texture and colour. The wild boar is leaner and denser than pork, but can be cooked in the same way and is suitable for serving with apple-based accompaniments, or red cabbage with balsamic vinegar, mushrooms and parsnips.
The bison burgers and sausages are made from North American ranched bison (or buffalo).
Bison offers a hearty meat that is richer and sweeter than beef, but is cooked in the same way. It's also lower in fat and cholesterol than beef and is coarsely chopped to give the burgers and sausages a grainy texture.
