Electronic oil testersTwo new electronic oil testers from Valentine Equipment provide a simple and cost-effective way of reducing oil waste by analysing the total polar material (TPM) of the oil to evaluate its condition and determine if it needs to be filtered, cascaded or discarded.

TPM is affected by heat, water and air, which can release triglyceride polymers, free fatty acids and oxidisation products into the oil, affecting the quality of the food. The hand-held testers can give a read-out in minutes, using either a traffic-light system or a digital display.

Used correctly, Valentine says that the testers can pay for themselves in 6-12 months.

Its new Clear Fry fryer includes a built-in oil monitor that measures the quality of the oil while in use and gives a warning on the front panel when it needs attention.

Trials with a major Swiss retail group saved the company 47% on annual oil usage by saving oil that would otherwise have been prematurely discarded.
