James Knappett, former head chef at Marcus Wareing at the Berkeley, is to join Brett Graham's two-Michelin-starred Ledbury in London, Caterer and Hotelkeeper can reveal.
Knappett, who left Marcus Wareing last month, will join the Ledbury brigade as sous chef in November.
"Brett and I cook very similar food, we have the same ideas and together we can really push the Ledbury even further," he told Caterer and Hotelkeeper.
Knappett, who counts multi-Michelin-starred restaurants including Per Se in New York and Noma in Copenhagen on his CV, added that eventually he would like to open his own restaurant together with his wife, Sandia Chang, who currently works at Simon Rogan's Roganic.
"I've had a few offers but I'm in no rush and before I do anything I have to know that everyone involved really believes in the idea," he said.
Knappett joined Marcus Wareing at the Berkeley as sous chef in September 2009 and was promoted to the role of head chef following the departure of Alyn Williams, who will open his own restaurant at the Westbury Hotel next month.
He previously worked at Rick Stein's Seafood Restaurant in Padstow, Cornwall, as well as Restaurant Gordon Ramsay and under Wareing at Pétrus.
