Bakery and proving ovens, from Rowlett Rutland

Thursday 10 November 2005 00:00

Rowlett Rutland has introduced a range of gas and electric convection bakery and proving ovens aimed at small to medium-sized catering businesses which want to produce freshly baked goods.

Features include twin fans for several models; a double-glazed door (except for the Midi Bri model, whose thermic door remains cold during baking); stainless steel outer body and either stainless steel or black enamel oven chamber; and interior light.

The temperature range on the convection/bakery range is thermostatically controlled from 50°C to 270°C and the timer can be set between 0 and 60 minutes. Baguette trays and stands are available for the Maxi Bri (four 400mm x 600mm trays supplied) and the Midi Bri (three trays), and 1/1 GN trays can be supplied as an optional extra for these models.

The Maxi Bri is available in both gas (32,000Btu per hour) and electric (6kW) versions; the Midi Bri is electric (3kW) only. Smaller ovens are also available, with 433mm x 333mm trays and either 2.6kW or 30,000Btu per hour ratings. Gas models are available in either natural gas or LPG.

The prover ovens come in two sizes, accommodating trays of 433mm x 333mm and 400mm x 600mm or 1/1 GN. They are available with or without a fan.
