Swaledale lamb rackSeasonal Cumbrian Suckling Swaledale Lamb is available from Udale Speciality Foods until the end of  August.

The young, light hill lambs, which are traceable from farm to fork, produce a tender,  succulent, milky and delicate meat from their near-organic diet, grazing on milk, grass and heather  on the Cumbrian fells.

The meat is also believed to yield higher levels of omega-6 and omega-3  essential fatty acids than lowland lambs. The lambs are sold as whole carcasses with a wholesale  price of about £79.

Fans of the meat include Restaurant Sat Bains, Boxwood Caf‚, Langan's  Brasserie, the Goring hotel and the Vineyard at Stockcross.
