Le Manoir aux Quat’Saisons - seeking a new general manager

The general manager of Raymond Blanc’s two Michelin-starred Le Manoir aux Quat’Saisons left his position this week, Caterersearch has learnt.

Tom Lewis, who joined Le Manoir as resident manager in January 2005 before being promoted to general manager in March of that year, left the property on Monday.

It has been suggested that Lewis may have had a falling out with chef patron Blanc, but a spokeswoman insisted that there was no argument.

“Tom has decided he would like to move on and do other things,” she told Caterersearch. “There have been discussions going on for some time now and the feeling was that this was the best thing. It is absolutely nothing to do with an argument with Raymond.”

Gurval Durand, deputy general manager of Le Manoir, is now acting as general manager while the property – which is owned by Orient-Express Hotels – searches for a replacement.

Jonathan Orr-Ewing, the previous general manager, also left the role rather suddenly “by mutual agreement” after a year in the position.

Using foraged ingredients is nothing new but the trend has become more mainstream over the past two years. However, the wider use of foraged food in restaurants also carries a certain amount of danger.
