Gluten-free dough balls

Product Isabel's Naturally Free From dough ball pre-mix

USP Based on a traditional South American snack, this specialist blend of gluten-free native Brazilian root flours (including cassava) creates a dough that mimics the taste and texture of Italian ciabatta bread and offers the same pliability and elasticity as conventional gluten-based mixes.

Details The mix creates a silky aerated dough with a crisp outer shell that does not need time to rise. The dough balls, which can be mixed with cheese or seasonings, can be prepared in advance and baked from frozen. Serve warm or cold as canapés, snacks or accompaniments to meals.

Fact The UK gluten- and wheat-free market is worth around £120m, with 600,000 people suffering some form of intolerance.

How supplied Bespoke quantities for food service: a 250g retail pack yields approximately 26 x 3mm dough balls.
