Cavit uses only indigenous Teroldego grapes from the Campo Rotaliano region to make its Terrazze della Luna IGT Novello wine.
Carbonic maceration of the whole uncrushed bunches ensures that the wine retains the original character of the grapes, and a short fermentation results in less sugar being converted into alcohol, giving the Novello 2008 (abv 12%) its characteristic fresh and fruity taste.
Cavit represents 4,500 growers and more than 5,700 hectares of vineyards, handling about 65% of the total wine production in Trentino, Italy.
