USP Poorly-maintained oil can ruin the taste of any chip, so Prep has launched a new training DVD, new kits and an online calculator to help caterers get the best from their frying oil.

DVD The Prep Guide to Good Oil Management DVD is packed with tips on choosing the best oil for your requirements, fryer maintenance and filtering, and cooking at the correct temperature.

Kit New oil management tools include a reusable filter, filter holder, thermometer, skimmer and discard kit.

Savings Prep's Do The Maths online calculator will also work out the savings that can be made by switching from a standard extended or rapeseed oil to one of Prep's High Performance Oils. For instance, its Prep ZT Long Life Vegetable Oil blend (available in 15-litre tubs and jerriboxes) will last two-and-a-half times longer than other extended oils thanks to its low absorption rate and it contains less than 1% of trans fats.
