Fermented bulbs from Black Garlic

Black garlic bulbsBlack garlic is aged natural white garlic with a sweet and sour flavour and jelly-like texture.

A month-long fermentation process that rotates the garlic on trays at a controlled temperature turns the garlic black and changes the texture, taste, odour and flavour without the use of additives or preservatives.

The cloves resemble white garlic in size and shape but after fermenting they are black, sticky, soft and chewy, and reminiscent of liquorice.

The black garlic is grown and aged on Jeju island in South Korea and comes in four varieties: peeled and prepared cloves (available online in 50g and 155g pots); bulbs (available in 1kg bags); juice with sweeteners in 100ml bottles; and pastes in 80g tubes.
