College gives students 'a false sense of security', says Marco Pierre White

Marco Pierre White has questioned the value of catering colleges, insisting that learning on the job is the only way for young hospitality workers to develop their skills.

In a wide-ranging interview with Caterer, the former three-Michelin-starred chef-turned-restaurateur said he considered formal education a "waste of time", adding that colleges were not able to prepare people for the industry and the challenges of working in a kitchen.

"College is the biggest waste of time," White said. "It gives a false sense of security. In the real world they struggle. I believe in day-release for those who think it's important to get qualifications."

White added that the hospitality industry allowed people to express themselves, better themselves and create security. "Get into a good kitchen, stay for five years, keep your head down, take the bollockings and learn your trade," he said.
