The Goose in Britwell Salome to close permanently

The Michelin-starred Goose in Britwell Salome, Oxfordshire, is to close down for good from 1 August.

Owner Paul Castle said he decided to close the eaterie because the economic climate made the business 'unfeasible'.

This is the second time this year that the Goose has closed, the first following the departure of former head chef Ryan Simpson and his team shortly after he won a Michelin star in January. Simpson fell out with Castle after the owner criticised the food the pub was serving for being 'too poncey'.

The pub re-opened in March after a refurbishment, with head chef John Footman at the helm. Footman said in March that he hoped to regain the pub's star for 2011.

But today, just four months later, Castle confirmed its permanent closure after news of the move broke on Caterersearch.com's Table Talk forum.

“Although refurbishing the premises and restaurant was a labour of love and I will be sad to close it, this was the right decision. The remote location and the difficult economic climate simply made the business unfeasible. Unfortunately, the restaurant needed too many cash injections without seeing any return on investment. The property is absolutely striking and could be put to a better use,” Castle said.

Foraging – why all the attention?

Using foraged ingredients is nothing new but the trend has become more mainstream over the past two years. However, the wider use of foraged food in restaurants also carries a certain amount of danger.
