Michelin-starred restaurateurs team up with Sodexo

Michelin-starred restaurateurs Pascal Aussignac and Vincent Labeyrie have teamed up with contract catering giant Sodexo, Caterersearch can reveal.

The partnership, which forms part of Sodexo’s chef development programme, will see young apprentices visit the duo’s Michelin-starred Club Gascon restaurant in east London.

It will involve a range of on-the-job training programmes at the fine-dining restaurant as well as the pair’s more casual Comptoir Gascon outlet.

Aussignac and Labeyrie will also be involved in a number of activities across the Sodexo portfolio, particularly through its Prestige arm. These include delivering a number of masterclasses; hosting Sodexo chef discussion forums; judging internal competitions; and speaking at internal conferences.

David Mulcahy, craft and food development director at Sodexo, said the partnership demonstrates the group’s commitment to the training and development of its chefs.

“As a company, we strive to be at the cutting edge of culinary excellence, and believe that this tie up, with two of the most inspiring restaurateurs around, will enable us to further strengthen our expertise and skill set,” he said.

Labeyrie, co-proprietor of Club Gascon, added: “Exemplary training is the lifeblood of the restaurant industry, especially in the fine dining sector. New talent needs to be honed and refined to meet the extremely high standards required.”
