Michelin-starred chef Shane Osborn launches kitchen garden

Shane Osborn, head chef and co-proprietor of the two-Michelin-starred Pied à Terre in central London, has launched a kitchen garden on the restaurant’s roof terrace.

Osborn has planted a range of 13 different herbs on the roof terrace including thyme, rosemary and flat leaf parsley as well as sweet cicely, lemon verbena and black peppermint.

He has also planted baby red radish, Chinese pink radish, and garlic and onion, which he will harvest next spring. The kitchen garden also includes a wormery and compost.

Osborn told Caterer that while the five by four metre space wasn’t big enough to supply the restaurant’s kitchen, it had helped to reduce its waste by around 10%.

“This isn’t about supplying the kitchen but it’s more of an educational tool for the staff,” he said.

“When you work in central London you’re so detached from where produce comes from and I want my staff to know what things look like and how they grow.”
