Alto Shaam banqueting carts The Halo Heat system used in six Alto Shaam banqueting carts provides a controlled and uniform heat designed to keep preplated dishes in optimum condition.

They include two slimline cabinets that are just 621mm wide, allowing them to manoeuvre and fit into narrower premises such as old buildings. They have separately-controlled compartments and will hold either 32 x 10in covered plates or 64 x 10in plates.

The four standard-sized models - which have a split Dutch door design to minimise heat loss - will hold 48, 96, 128 and 192 10in plates between 16°C and 93°C.

Alto Shaam also offers a range of cook-and-hold ovens that can cook, roast, hot hold, and reheat frozen food in one cabinet.

Their intelligent cooking system uses a core temperature probe to determine when to switch from cook to hold at a preset temperature. In most cases, the ovens do not need oven hoods, venting or fire extinguishing systems fitted.
