Mint and Mustard, one of Wales's leading Indian restaurants, has appointed Pramod Nair as executive chef.

Nair, who has worked for Indian restaurants in India, Norway and Iceland, joins the brigade at the Cardiff restaurant, which is one of only three restaurants in Wales with a Michelin Bib Gourmand.

"I'm really looking forward to adding some 'extra spice' to this already established and vibrant restaurant where people have an appreciation for quality and value," said Nair, who was born in Kerala, southern India and has prepared state dinners for the Queen and the Queen of Norway.

"We will continue to use only the best, freshest ingredients to create dishes that are a treat for all the senses - full of flavour, light and beautifully presented."

Founded in Cardiff in 2007, Mint and Mustard is expanding with the opening of a second restaurant in Taunton, Somerset, next month.

Foraging – why all the attention?

Using foraged ingredients is nothing new but the trend has become more mainstream over the past two years. However, the wider use of foraged food in restaurants also carries a certain amount of danger.
