The Berkeley hotel has confirmed that it intends to work directly with two-Michelin starred chef Marcus Wareing to launch its own restaurant this September.

The move, which has been the subject of industry rumour for months, sees Wareing parting company with Gordon Ramsay after 15 years together.

Wareing, who has operated Pétrus for Gordon Ramsay Holdings since 2003, will take on the lease of the restaurant on September 19.

A spokeswoman for Berkeley owner the Maybourne Group told Caterersearch the hotel was looking forward to working directly with Wareing.

“He has built a loyal following and a distinguished reputation as one of the country’s most respected chefs,” she said.

“Marcus will continue to oversee the restaurant offering some of the finest culinary experiences and dishes in his own inimitable style that has won him two Michelin star acclaim.”

The hotel’s general manager, Klaus Kabelitz, added: “The decision to continue to work with Marcus allows us to offer our guests a seamless transition so that they can continue to enjoy his passionate and creative cooking that they have come to love so much over the years.”
