Ramsay to transfer Pétrus name following split with Wareing

Gordon Ramsay Holdings (GRH) is set to transfer the Pétrus name to another site within the group after Marcus Wareing leaves the operation to work directly with the Berkeley hotel in September, sources have told Caterersearch.

The move, which sees Ramsay parting company with his protege after 15 years together, will see Wareing - who has operated the two-Michelin-starred Pétrus for GRH since 2003 - taking over the restaurant's lease on September 19.

The restaurant is unlikely to trade under its current name as it owned by GRH and industry sources suggested that "Pétrus" will be transferred to another site within the group, with La Noisette identified as the most likely venue.

Neither the Berkeley or Wareing have been able to confirm the new name of the restaurant, but "Marcus Wareing at the Berkeley" has not been ruled out.

Derek Bulmer, Michelin guide editor, said leaving the GRH group in itself will not affect the Berkeley restaurant's two-Michelin star status.

"It's the food that's important and as soon as we've got the chance to go back and review for the 2009 guide, we will," he told Caterersearch.

"I would imagine that things will change very little. We will have to go back as soon as the place reopens to verify it ourselves."
