Chinese crayfish tails from Big Prawn

Since it set up in 1995 the Big Prawn Company has developed into the UK's largest brining company and one of Europe's leading processors of luxury Chinese crayfish tails.

The crayfish (Procambarus Clarkii) are caught from the wild in China and brined in the UK to provide a fresh taste and succulent, juicy texture, and the company is working with the Chinese Crayfish Association to introduce sustainability measures - such as minimum-catch-size hatches for creels - to protect the species and the juveniles.

The tails, which are available in 900g and 8kg net drained weights, have a shelf life of six weeks from production. The tails complement a core seafood range that includes Tiger, Chilean Gambas and Cold Water Prawns, King Prawns, mussels, seafood bites and seafood cocktails.

All have shelf lives of between six and eight weeks.
