Gordon Ramsay, Nick Nairn and the Oxo Tower are all customers of Keltic Seafare, which set up 15 years ago in Dingwall, Ross-shire, on the West Coat of Scotland to supply live creel-caught langoustines and lobsters, along with scallops collected from class A waters by professional divers to avoid the damage dredging causes to the sea bed.

Scallops are sold either in the shell or as dry meat.

The independent supplier can deliver from creel to kitchen within 18-24 hours. Its seafood range is supplemented by seasonal wild Scottish mushrooms and locally smoked salmon.

To buy it, call 01464 821 358
