Turbochef High h Batch oven from ServEquip

The High h Batch oven, the latest rapid-cook oven from US manufacturer TurboChef, is designed for operators who need to produce a wide variety of baked products quickly, particularly muffins, cookies, cakes and pizzas.

The patented cooking system simultaneously heats top and bottom of the food using the combination of a moving hot-air "shroud" and microwave power. This is claimed to be particularly effective in ensuring a moist centre and crispy outside.

Programming of the table-top oven extends to 72 menu items and can be customised for individual outlets, minimising training and staff supervision. UK supplier ServEquip says that in a cook-off with a table-top impingement conveyor oven, the High h Batch cooked muffins 25% faster, while French fries were produced 64% faster. List price is £4,345.

Like the other TurboChef ovens available to UK users (the C3 and Tornado), the High h Batch has programmable menu settings and ventless operation, which negates the need for expensive fume extraction. Energy savings of up to one-third compared with conventional ovens are claimed.
