Huw Griffiths is the executive development chef at Pabulum.
What was your worst job?
Head of central production for an international trading company. It sounded grand but I can assure you it wasn't. The idea was that I would source food from France, and using all the latest technology, repackage it for distribution to its restaurants and selected retail outlets. The production unit also had a full working kitchen producing its own range of French foods - all of which fell under my remit.
What was so bad about it?
I originally took the job after being 'headhunted' from a safe, secure and prestigious position within a large educational establishment. If I am honest, I was flattered that someone took the time to seek me out. I was excited and gullible. More fool me.
Despite my lofty title and various promises, I worked all hours. The final straw was when I was told we would be open on Christmas Day, only for my boss to change his mind two days beforehand. I had bought no food for Christmas and so my wife and I spent the festive period alone, with next to nothing to eat. What's more, he then asked me to work on New Year's Eve as a waiter!
What did you learn from the job?
That it pays to do your research. Catering is a tough business and I always had my doubts about the job, but I let my ego get the better of me. I also learned quickly that it pays to plan your career. I know it sounds like a cliché but without it I wouldn't be where I am today.
What do you enjoy most about your current role?
The variety - two days are never the same. The people are an inspiration, and it's great being part of something where you feel valued. And last but not least, the challenge of constantly creating something new. The recent Government guidelines on food in secondary schools have been a real challenge, but one that we have embraced and are now thriving upon.

Lots more openings in schools; the development of more food ideas in line with the aforementioned Government guidelines; and hopefully our first training clips on YouTube.
