Paxton & Whitfield takes on French artisan cheeses from Androuet

Androuet artisan cheese

Artisan cheesemonger Paxton & Whitfield has joined forces with Paris fromagerie Androuet in a venture that will bring some new French artisan cheeses to the UK in time for Christmas.

These will include more seasonal cheeses such as Trappe d'Echourgnac, made by nuns from L'Abbaye d'Echourgnac in Dordogne; Le Pechegos, a white mould coated soft cheese that is matured in caves, washed in brine and wrapped in a pine strip; and Clacbitou, made in the Bourgogne region, and matured for up to five weeks.

Also joining Paxton & Whitfield's stock of more than 90 French cheeses is Le 1909, an unpasteurised ewes' milk cheese based on a Perail recipe with a soft pâte and nutty flavour and created to celebrate Androuet's 100-year anniversary. Another new addition is Comte Androuet, an unpasteurised cows' milk cheese made and matured by the renowned Marcel Petite and a PDO (Protected Designated Origin) cheese.
