Compass Group has picked up the deal to run catering, conferencing and banqueting at the historic Maltings in Ely, Cambridgeshire, when it re-opens in March.

Located on the banks of the River Ouse, the Maltings was built in 1868 for the Harlock Brewery before passing into council ownership.

It was converted in 1971 into a multi-purpose venue for conferences, seminars, exhibitions, banqueting, cinema and entertainment.

Catering at the site was previously provided by Elior UK’s Digby Trout Restaurants.

Before closure to restore the roof and renovate the interior of the building, events at the Maltings attracted in excess of 55,000 users each year, whilst gross turnover for site was in the region of £900,000 per annum.

Councillor Fred Brown, leader of East Cambridgeshire District Council, said: “The Maltings is a key building at the heart of Ely’s Riverside and I know to have it closed for so long has been to the detriment of our city.

“We have awarded the running of the Maltings to a first class company in Leith’s, who have a great reputation for delivering fine food and excellent facilities.”

Using foraged ingredients is nothing new but the trend has become more mainstream over the past two years. However, the wider use of foraged food in restaurants also carries a certain amount of danger.
