Mediterranean pastries from Zorba's

BourekiaBake-off sweet and savoury pastries from Zorba's, Cyprus's biggest baker and retailer of traditional convenience foods, will help caterers provide an authentic Mediterranean offer.

The line-up includes such traditional recipes as koupas (golden balls of crushed pourgouri wheat filled with minced meat or mushrooms) and bourekias, which are deep-fried pastry parcels crammed with meat, cheese or custard.

The pastries on offer include puff, olive oil-based filo varieties and heavier shortcrust varieties, while fillings can include halloumi and feta cheese, tahini, creams and chocolates. Sizes range from buffet bites to full-meal portions.

The pastries are sold frozen in catering packs that can be stored at -18°C for up to six months.
