Fresher leaves from Living Salads

Living SaladsGourmet green leaves are fast becoming a way of differentiating caterers' dishes from the crowd, but boxed baby leaves are prone to wilting before they're fully used. Living Salads of Hull supplies leaves in their grow trays so caterers can harvest them as needed while they continue to grow for up to 10 days.

Available in mixed or single-leaf trays, which start at 140mm x 180mm in size, with conventional or organic options, the line-up of unusual leaves includes Tatsoi, Golden Streaks, Red Chard, Red Mustard, Red Frills, Rocket, Red and Green Pak Choi, Red Amaranth, Watercress, Pea Shoots, Mixed Oriental Leaf, Chervil and Carrot Leaf Mizuna.

Fans include Michelin-starred chef-patron Tom Aikens and Simon Rogers from the award-winning Boar's Nest in East Yorkshire.
