El Bulli ingredients from Infusions

Xantana, a sauce and soup thickener that will not distort taste, is one of the new additions to the Texturas line of natural food derivatives created by Ferran and Albert Adrià of Spain's celebrated El Bulli restaurant.

The Surprises range of flavours and textures include crystallised honey granules (Crumiel), powdered maltodextrin from tapioca (used as a no-calorie, oil-absorbing bulking agent) and Fizzy, a can of effervescent elongated granules that can be eaten directly, dissolved in water, or bathed in chocolate and added to fruits or sorbets.

Completing the cast of newcomers is the LyoSabories range of dried fruits, which offer a choice of whole blackcurrants or raspberries and cubes of strawberries, mango, peach or pineapple.
