Shaun Rankin to be guest chef at the Dorchester
Michelin-starred chef Shaun Rankin is to be guest chef at the Grill restaurant at London's Dorchester hotel for one week in May.
Rankin, from the Bohemia Bar and Restaurant in Jersey, will team up with the Grill's head chef Brian Hughson to showcase top Channel Island produce at the restaurant from Monday 14 to Saturday 19 May.
The menu will offer produce such as new season Jersey asparagus and potatoes, Jersey scallops and lobster, as well as new season lamb from the smaller Channel Island of Sark, and Guernsey Fort Grey cheese.
It will include Rankin's signature dishes of new season Jersey asparagus, three hour cooked duck egg with morel mushrooms and herb sabayon; warm Jersey lobster with a crab and fennel ceviche and gratin of saffron macaroni; slow cooked belly and spiced glazed cheek of pork, sweet potato and orange, local Jersey calamari; and his winning treacle tart with Jersey clotted cream ice cream, which impressed the judges in BBC Two's Great British Menu.
Hughson said: "The provenance of ingredients is a passion and the British Isles have exceptional produce. This will be a great opportunity to showcase produce from Jersey for the week."
Rankin added: "My cooking is all about treating the produce with total respect, working on combinations of flavours whilst using classic cooking methods but revamped in my own way, which I am keen to share with London diners."
