Hilton to roll out branded gastropub concept

American hotel giant Hilton Hotels is planning on rolling out a branded restaurant concept across some of its suburban or secondary market properties.

Steven Peterson, Hilton’s new corporate chef for the Americas, said he was thinking of expanding a gastropub concept called Urban Tavern that now exists at the Hilton San Francisco Union Square, according to Hotelsmag.com

Hilton hopes to take the “look and feel” of a freestanding restaurant in a major metropolitan location and replicate it in order to create destination restaurants in its hotels in secondary cities and suburban locations.

Peterson said: “We want to give those locations an identity with a restaurant so that when guests check in, they want to come downstairs and eat in the restaurant versus ordering room service or going outside of the property.”

The dinner menu is likely to include starters like a daily selection of meat and cheese served with grainy mustard or a grilled beer sausage & house-made pretzel combo for, while entrees range from fish & chips and a burger to braised beef short ribs and steak & fries.

Earlier this year Hilton’s planned roll out of its boutique hotel concept Denizen hit the skids when its chief creative team were accused of corporate espionage by Starwood.
