Joël Robuchon, the world's most Michelin-starred chef, to launch first Japanese restaurant

French chef Joël Robuchon is to launch his first Japanese restaurant at Monaco’s Hotel Métropole Monte-Carlo in December.

Yoshi, which means kindness in Japanese, will be Robuchon’s second restaurant at the five-star hotel.

Robuchon already has an eponymous two-Michelin-starred eatery, which is overseen by executive chef Chrisophe Cussac, at the hotel.

The new 40-seat restaurant will offer a classic Japanese menu created by head chef Takéo Yamazaki.

Dishes will include sushi, sashimi and maki alongside an à la carte menu that will be complemented by a wide range of sake and Japanese teas.

The dining room at Yoshi will be designed by French interior designer Didier Gomez and will feature light tones such as white and pale green alongside materials including ebony wood, stone and silk. It will lead on to a Japanese garden created by Jacques Messin.

Robuchon, who is the world’s most Michelin-starred chef with a total of 18 stars, currently runs 12 restaurants on three continents, including his three-Michelin-starred eponymous restaurant in Tokyo.

He last week retained the top accolade of three stars for his eponymous restaurant at the MGM Grand Hotel in Las Vegas.
