Sea bass and halibut from M&J Seafood

Sea bassSea bass is sold individually from M&J Seafood and farmed from Mediterranean waters under strict governmental guidelines.

It is available whole in portions of 350-380g, which are scaled and gutted or in 90-140g fillet portions, which are skin-on, descaled and pin-boned.

The slow-maturing halibut can live for up to 55 years, making it vulnerable to over-fishing, which is why M&J Seafood recommends buying wild pacific halibut between April and November and farmed Atlantic halibut thereafter.

Wild and farmed halibut is available and ranges between 1kg and 7kg. It has a creamy white flesh with a firm and meaty texture.
