Details As combi ovens become increasingly complicated, Valera has bucked the trend with the launch of the simple-to-use LD-4. The oven, which can accommodate four 2/3 GN trays, can be used for convection cooking, steaming, combi-steaming, regeneration and core temperature cooking.

Features Convection temperatures range from 50°C to 270°C while steam is delivered by direct injection or the boiler system. A simple dial sets time, temperature and humidity. The double-glazed door opens in two stages so steam is vented safely and the hinged interior door glass and removable inner racks make cleaning easy.
