FCSI rallies industry to commit to the Food Legacy Pledge

The FCSI has urged catering consultants to write the Food Legacy Pledge into tenders to help garner support and push through positive change in food standards across the food service industry.

David Russell, of the Foodservice Consultants Society International (FCSI) and strategic catering consultant to Locog, and Rosie Boycott, chair of the London Food Board, rallied the industry to unite and commit to the pledge at a breakfast briefing at FCSI's annual forum.

Contract caterers, consultants and equipment manufacturers were told about the pledge, which asks the industry to commit publicly to taking steps to improve the healthiness, ethics and sustainability of food served.

Russell said that consultants hold the key to pushing through change because they come into contact with a huge percentage of the industry.

"We're encouraging them to incorporate the pledge into tender documents, demonstrate that it won't cost to get involved and help caterers achieve it," he explained.

"It brings together a commitment to use local, British and seasonal produce, support the living wage and train employees in health and safety and sustainability."

Boycott added that the London 2012 Games represent a once-in-a-lifetime opportunity to inspire change. She said: "By working together we can do something incredible to food and it seems to me this is our opportunity to leave a legacy after the Games."
