Space for haccp records

Is it becoming difficult to find space to store mandatory but redundant Hazard Analysis and Critical Control Point kitchen records?

The Hobart Manufacturing Company has launched a hand-held computer to monitor the temperature and time of transportation, storage, cooking and service of food.

The system works by pointing the handset's infra-red beam at compatible equipment. The equipment sends back a temperature reading to the handset. This information is downloaded back to a computer. Data in the handset can be stored on disk for easy access. List price for the handset starts at about £1,700 plus VAT.
