Jean-Christophe Novelli returns to London next week with the opening of Novelli in the City at the Capital Club. The chef-patron of Auberge du Lac at Brocket Hall in Welwyn, Hertfordshire, said that he would be behind the stoves at the Capital Club "for as long as it takes to settle down". He added that he plans to return to the site at least once a week after the opening period. Richard Tonks, who has been executive head chef at the Capital Club for the past three years, will continue to run the kitchens. "Auberge du Lac is like my wife," said Novelli, "but the Capital Club will be my mistress."
