Michelin-starred Martin Wishart to launch second restaurant in Edinburgh

Michelin-starred Scottish chef Martin Wishart is to open a second restaurant in Edinburgh on the site previously occupied by Tony Singh's Tony's Table.

Wishart has taken over the site on North Castle Street and will relaunch it as a 70-seat brasserie in mid-June, following a refurbishment which will include a brand-new kitchen. Work will begin at the site next month.

Head chef of the yet-to-be-named restaurant will be Paul Tamburrini, who joins from the Hotel du Vin in Glasgow, where he was head chef for four years. He previously worked with Wishart and will join the business as a partner. Restaurant manager will be Steven Spear, who has been promoted in-house.

A spokeswoman for Wishart told Caterersearch the new restaurant would be more casual than the chef's eponymous fine-dining restaurant.

"The menu will include classic brasserie dishes as well as seafood platters and nice cuts of meat," she said. "Average spend will be £30 at lunch and £65 at dinner, including drinks and service."

The new launch will bring Wishart's portfolio to four operations, including his restaurant at De Vere's Cameron House at Loch Lomond and his cookery school in Leith.

Restaurant Martin Wishart was recently named the top-rated restaurant in the UK for the second time in three years in Toptable's top 100 diner-rated restaurants.
