Château Blanc breads from Southover Foods

Friday 29 May 2009 07:28
Château Blanc breadRustic loaves, olive breadsticks and six-cereal baguettes are among the range of authentic French bakery and morning goods offered by Château Blanc.

The breads are made to traditional recipes and methods with modern technology and using flour made from a winter wheat called Camp Rémy. The dough contains 80% water for high hydration and is left to ferment for four hours - which allows it to rise slowly, producing large holes - before being baked on a stone hearth.

Products include baguettes, flutes, loaves and bread rolls in plain, sesame seed, poppy seed, olive and six-cereal varieties. Supplied frozen and part-baked, the products contain no additives or preservatives.

The 57g breadsticks are more like bread in texture than UK-style breadsticks and include olive, hazelnut and raisin or fruit (apricot, fig, date) varieties.

The 430g brioches include sugar, chocolate chip and sultana versions, while sweet treats include colourful macaroons in 12g, 20g and 45g sizes and pistachio, raspberry, chocolate, vanilla, lemon and coffee flavours.
