
Ingredients
(serves eight)
For the pastry
6oz flour
1tsp baking powder
3oz caster sugar
3oz butter
1 egg yolk
1dsp lemon juice
For the honey mixture
3oz butter
5oz soft brown sugar
3 eggs
6oz set honey
1tsp vanilla essence
4oz walnuts
Method
Mix the ingredients for the pastry in a food mixer and rest. Then put the mixture into an8in flan ring and bake blind for fiveto six minutes. Cool.
To make the honey mixture blend all of the ingredients together. Line the bottom of the flan case with 4oz walnuts and pour over the honey mixture. Bake in a hot oven (175°C-200°C) until set.
Serve cold with clotted cream.
