Rather than rely on thaw-and-serve products, which can look a bit frayed by 9am, hoteliers could boost breakfast appeal by producing croissants and pastries little and often throughout service. 

Mono Equipment says the programmable control on its BX ovens enables various products to be baked off by the breakfast team without needing extra staff. 

Ovens come in a range of sizes, starting with the BX two-tray, which runs off single-phase, 13amp electricity and is compact enough to work in small spaces. 

Classic control offers nine programmes, while optional ColourSmart control can hold up to 150 programmes.
