Combis for grab-and-go outlets from Rational

Wednesday 30 May 2007 06:33
The growing pressure to offer efficient breakfast programmes in grab-and-go environments is demonstrated at 94 Texaco forecourt stores operated by Somerfield. A wide menu of "hot food to go", including egg muffins, sausage baps, baguettes, Danish pastries and cookies plus pies and baked items, is now produced fully automatically at the stores each morning.

Two stacked Rational SelfCooking Center six-grid combi-ovens in each back-of-house store kitchen enable all the different products to be cooked at the same time with no crossover of odour or flavour.

Other factors behind the choice of combi-steamer was limited space and the need to ensure constant quality and safety, irrespective of operation by unskilled and often transient staff.

After staff select food items on a display and press a start button, oven intelligence takes over, choosing the best "climate" and time to cook the food. Built-in CleanJet self-cleaning programmes enable the ovens to stay clean with minimal staff involvement.
