Sea bass options from M&J Seafood

Tuesday 30 June 2009 16:54
Sea bass

Smoked, wild and farmed varieties of sea bass are available through M&J Seafood.

The fish are hand-filleted at a smokehouse in Cornwall, cured in brine and cold-smoked using 80% oak and 20% pine chippings to produce a slightly sweet taste.

They are sold as frozen 80-120g fillets in packs of 20.

Wild sea bass is line-caught from day boats around the UK and supplied fresh in 400-600g portions.

For a more affordable fillet, M&J also offers sea bass farmed off the Mediterranean coast under strict environmental guidelines and supplied fresh in 90-140g fillets.
