The Montague six-burner ranges from Imperial Catering Equipment are being updated with features that contribute to greater reliability, such as front-vented ovens as on the Montague Grizzly Series.

When you open the door of an ordinary rear vented oven the cold air rushes in, upsetting the heat distribution and creating cold spots, whereas with a front-vented oven the protective heat wall maintains even heat and prevents cold spots.

Standard ovens are available in two sizes using a 20,000 or 35,000BTU per hour cast-iron burner, depending on size, while the convection oven model uses a powerful 40,000BTUs per hour burner.

With a temperature range of up to 260°C, protective heat barriers prevent cold spots to maximise performance and ensure consistent cooking temperatures.
